Amylase powder is an enzyme, obtained from plants, animals and microorganisms. It helps to break down the starch molecules into sugar molecules and digest carbohydrates. Amylase powder is a light yellow to off white powder, sparingly soluble in water, insoluble in ethanol and in ether. 

Amylase is essential for brewing beer made from sugars derived from starch. Amylase powder is also used in bread improver to increase the volume, lower the firmness, and stay the bread fresh.
